Abstract
The French food oil market has known a deep modification of his structure during the last 40 years both from a quantitative and a qualitative point of view. The growth of the consumption of sunflower oil during the seventies has counterbalanced the predominance of the groundnut oil, the major oil during the sixties and has defined a new perimeter of the market. The importance of nutrition and health, the development of the uses of oils by the food industry characterise the today’s market. Nowadays the French market is “coloured” by several seed or fruit oils. The success of olive oil is a good example of such trend. Furthermore, several scientific studies on Omega 3 Fatty Acids confirm the importance of oils in the nutrition balance and give them a new image and notoriety.
