Head Space-SPME-GC-MS analysis of a defected oil already evaluated by a sensory panel: defect “mold-earth-humid”, list of compounds evaluated as significant by Chemometric analysis, compounds with an asterisk are those recognized as the “green” sensation group. Two algorithm are reported where the green compounds effect had been separated by those belonging to the defect and an “instrumental” median had been calculated (Moret and Conte, 2014 unpublished data).
